For as long as I can remember I have always loved cooking and have never been afraid to try any type of cuisine. I have travelled extensively allowing me to sample many dishes to recreate at home.
After living in London, I moved to Naples, Italy for 10 years with my family. We travelled all over Italy and around much of Europe and then for the last 2 years I used my Italian friends hotel to run my business International flavours, catering themed nights for 60 Americans (big military bases in Naples) every second week. Mexican was always very popular, but I also did Thai, Indian, Lebanese, Morrocon and of course an Irish night for St Patricks Day! Pompilio the owner and his family who worked in the hotel were opened to many new experiences, helping to roll spring rolls one week to tagines and dolmades the next!
Having loved this experience I returned to Ireland in December 2001 with my young son and completed the 3 month certificate course at Ballymaloe Cookery School. I stayed on at the cookery school as a tutor until August 2003, when I moved back to Dublin to put my cookery skills to a different use altogher. I took up the position of Appliance Specialist with Houseworks who sold SieMatic kitchens. This positon involved advising clients of their appliance needs, specializing in Gaggenau, Neff and Siemens and various others. I did regular cookery demonstrations in the showrooms in Dublin, Belfast and Cork. In fact the appliance side of the business became so large that many people getting kitchens elsewhere bought their appliances from me as they liked my no nonsense, honest approach.
